Red Beans and Rice 2T olive oil 2 links andoullie sausage 1t Cajun seasoning (or thyme) 1 small onion, chopped 2 stalks celery, chopped 1 clove garlic, finely chopped 1/4c roasted red pepers or pimentos, chopped 1 15oz can of red beans or kidney beans 1/2c tomato sauce 1/2c chicken stock 4 cups cooked long grain white rice heat the olive oil in a large skillet and saute the sausage, seasoning, onion, celery and garlic over medium heat for 5 minutes. add the red peppers, beans, tomato sauce and chicken stock. simmer 10 minutes. serve the mixture over cooked rice serves 4
