Oatmeal Zuchini Bread 1 1/2 cups sugar 3 eggs 2/3 cup oil 1 tsp vanilla 2 1/2 cup flour 1 cup oatmeal, uncooked 1 tablespoon baking powder 2 teaspoon cinnamon 1 1/2 teaspoon salt 1 teaspoon allspice 1/2 teaspoon nutmeg 3 cups shredded zuchini 1 cup chopped walnuts (optional) Preheat oven to 350 degrees. Grease bottoms of two 8 1/2 by 4 1/2 loaf pans. Beat together sugar, eggs, oil and vanilla. Add combined flour, oats, baking powder, spices and salt. Mix. Stir in zucchini and nuts. Spoon into pans. Bake 50 minutes or until toothpick inserted in center comes out clean. To keep top from crumbling when cut, brush with melted butter. Cool 10 minutes, then remove from pans.
