Fruited Zucchini Bread 3 eggs 1 cup oil 2 cups sugar 2 teaspoons vanilla 2 cups shredded unpeeled zucchini 8 oz can crushed pineapple, well drained 3 cups flour 2 teaspoons baking soda 1 1/2 teaspoons cinnamon 1 teaspoon salt 3/4 teaspoon nutmeg 1/4 teaspoon baking powder 1 cup chopped dates 1 cup chopped pecans (optional) Preheat oven to 350 degrees. Beat eggs, oil, sugar and vanilla until thick. Stir in remaining ingredients, mix well. Pour into two 9 x 5 inch loaf pans. Bake 1 hour or until toothpick comes out clean. Brush with melted butter, cool 10 minutes, remove from pan.
